"The griddle was in the house, there’s a triangle and stand and you put it on the fire then the griddle on top of it until its nice and hot. You can make griddle bread, pancakes dropped scones this way. My mother’s cousin in Limerick used to make griddle bread, the taste is so different. It’s a taste I didn’t want to lose that’s why I continue to make it."
