A Good Neighbour's Cheese Cake

"My neighbour in Terenure was an old German lady by the name of Hilda. I'm not sure how she ended up in Dublin but she arrived many years before we moved in. She was lovely and she was a baker. She gave me this recipe for Cheese Cake, I hadn't tasted anything like it before. It's lovely and reminds me of what a good neighbour she was."
